Crunchy Tuna Sandwiches

Crunchy Tuna Sandwiches

1 6-1/2 oz can tuna
1 tablespoon mayonnaise
1 small tomato, diced
1 teaspoon vinegar
2 - 4 slices of bread (depending on how thick you like your sandwiches. Use whole wheat bread for added fiber and nutrients.)
1 handful potato chips 
Mix together tuna, mayonnaise, tomato and vinegar. Spread on bread to make a sandwich. Pack sandwich and chips separately; add chips to your sandwich immediately before eating to preserve the crunch.
 

Kindergarten Kiddy-Dip

1/2 cup peanut butter
1/4 cup any flavor jelly
Swirl together using thick pretzel sticks, then eat - pretzels and all!
 

Yummy Hummus
Spread on wheat crackers and add sprouts or lettuce to make tasty low-fat mini-sandwiches. A perfect lunch-box treat.

1 19 oz. can  chick peas
3 garlic cloves, minced
1/4 cup tahini (sesame-seed paste)
6 tablespoon lemon juice
1/4 teaspoon cumin
Mix all ingredients in a food processor or blender until smooth. If desired, adjust the amount of lemon juice to vary consistency.
 

After School Specials

1 cup chocolate chips
2 tablespoons butter, cut into chunks
Potato chips and pretzels
Melt chocolate chips and butter s-l-o-w-l-y in a completely dry double boiler or heavy saucepan over low heat. Add more butter for a thinner sauce. Dip potato chips and pretzels in chocolate sauce, place on a waxed paper, and refrigerate until the chocolate hardens.
 

Fire Drill Salsa

4 large tomatoes, diced
1 large onion, diced
1 medium bell pepper (red, yellow or green - you decide), diced
1 cup habañera chilies, chopped (remove the seeds for a milder taste)
1/4 cup chopped fresh cilantro
1/2 cloves garlic, minced
Mix and serve with tortilla or potato chips.
 

Awesome Artichoke Dip

1 cup sour cream
1 cup mayonnaise
1/2 cup grated parmesan cheese
1 10 oz. can of artichoke hearts, rinsed, drained and quartered.
Mix together sour cream and mayonnaise until smooth. Stir in cheese and artichoke hearts. Microwave 1 to 2 minutes until warm and bubbly. Serve with potato chips or crackers.
